450g minced beef

Step 1: Shape Up the Patties
Bung the mince in a bowl with a bit of salt and pepper. Mix it gently – don’t go all Hulk Smash on it – then roll it into 12 mini patties. Keep them compact so they sit snugly in the brioche rolls.
Step 2: Bacon Time
Sling the streaky bacon on the grill and let it sizzle. Two to four minutes a side should do it, depending how crispy you like it. The smell alone will have your mates hovering like seagulls at the seaside.
Step 3: Cheese Melt Magic
